30 Minute Meal

On Thursdays, my friend Caitlin, has her culinary adventures. This week she made hot cross buns. Yes, they really do exist! You can click here to read about how this adventure went.

I don't have the patience for such adventures. I am more into immediate gratification. After a long day, I pulled this together...


Salsa chicken and black beans served with spinach salad and fresh frozen mango

This is my favorite 30 minute meal!


Recipe:

- 3 to 4 whole chicken breasts
- 1 1/2 cups favorite salsa
- 3 tbsp Dijon mustard
- 1 tbsp brown sugar


This is my favorite kind of salsa

Mix salsa, mustard, and sugar together and pour over chicken breasts in pan. Cook on medium 30 minutes if frozen, 20 minutes if defrosted.



While the chicken was cooking, and I wasn't chasing T Rex, I pulled together the spinach salad, heated the black beans from cans, and took the mangoes out of the freezer.

Total prep time: 30 minutes

Delicious!
